My growth and metabolism as S. mutans is able to change the environmental conditions of the oral flora, which can let fastidious organisms to colonize and causes the formation of dental plaque. That's the stuff you feel on you teeth if you forgot to brush them. I am a specialized microorganism that is equipped with a lot of receptors which allows me to adhere/stick to the surface of the tooth and I can create a slimy environment. After I have adhered to the tooth, I will begin to divide and produce microcolonies within that slime layer so I can construct a biofilm. I also can begin to grow and synthesize dextran with the enzyme dextransucrase. Dextran contains a capsule that binds to the enamel and forms a biofilm that consists of up to 300-500 bacterial cells. Crazy, I know!
